Pumpkin Super Bread

That is what I decided to name this recipe, since pumpkin is a super food and it's all basically healthy!  I started with Cara Key's banana bread recipe and changed things up a bit.  Here it is per requests (ok, so maybe it was only two, but that is still plural):

Cara Key's banana bread:
4T + 1/2 t vinegar or lemon juice (mix and set aside and add last)
1C mashed bananas
1/2C oil (or butter)
1/2C sugar
2 eggs
1t vanilla
11/2 cups of flour
1t baking soda
1t baking powder
dash of salt

I just realized I initially forgot to add the baking directions!  Oops!  Mix all ingredients together and put in a greased loaf pan and bake at 350F for one hour, or until knife comes out clean.

So that's the original I worked off of and here's the changes:
1C pumpkin puree (about half a regular sized can) instead of bananas
1/2C of agave nectar instead of sugar (you could use honey as well)
and I subbed whole wheat flour for all the flour called for.

I also added pumpkin pie spice and cinnamon to it so it's more of a pumpkin spice bread.  I just eyed it, but put in at least a teaspoon of both, but maybe more.  I definitely need to add more the next time I make it.  Also, I didn't do the full amt of sugar (agave) called for, and I should have.  If you like it sweeter you can add more or if you don't want as much of a "wheaty" taste to your bread you could do 1/2 whole wheat and 1/2 all-purpose flour.  Just some thoughts.  It was a big hit with Paul, and Lins, to answer your question, agave does great in baking!
